Paletas Morelia: A Handcrafted, Fast Casual Experience
In this episode of Fast Casual Nation, Jordan Krams, the vice president of Mexican-style ice cream shop Paletas Morelia, gives us the inside scoop on this fast casual venue.
Based in South Florida, Paletas Morelia offers a cutting-edge ice cream experience. The shop specializes in Mexican-style, handmade ice cream bars—called paletas—crafted with premium, all-natural ingredients. Flavor options range from passion fruit and pineapple to cookies and cream and Reese’s peanut butter. You can also have your bar filled with condensed milk or nutella.
“Whatever [bar] you choose, you have the option to dip it in one of our dips and then roll it in one of our toppings,” adds Krams. “I don’t know if anything is recession-proof, but luckily our particular model has been pandemic-proof.”
Paletas Morelia has not had to close any of its locations since the onset of the pandemic. While the chain provides indoor and outdoor seating, the bulk of its revenue has always come from to-go and takeout purchases.
One of the chain’s newest paleta creations during the pandemic is the waffle burrito. “We take the waffle while it’s still hot and fold it over so it hugs the paleta,” notes Krams. “And the great thing about it is we can still dip it and top it.”
