Matt & Marie’s Modernizing the Classic Italian Sandwich
In this episode of Fast Casual Nation, Paul Barron interviews the masterminds behind the superior, Italian sandwich concept–Matt & Marie's. Marie Capp and Justin Saplosky, founders of Matt & Marie’s, share their success story, going from business school collegians to craft sandwich restauranteurs.
Capp and Saplosky met at the Wharton School of business, where they quickly realized they shared a love for sandwiches. The two worked up a novel idea to create a gourmet, Italian sandwich concept in the heart of Philadelphia. With a mix of dedication and a focus around modernizing the classic Italian sandwich, the two business school grads joined forces and entered the “Sandwich City of America.” “I cannot tell you the amount of support we’ve gotten from Philly business owners,” says Capp. “They welcomed us with open arms.”
The sandwich game is not an easy one to enter, being the most competitive sector in the fast casual category. “When you look at the landscape of chefs here, people say it rivals New York City,” adds Capp. The art of sandwich making consists of the perfect mixture of bread, meats, cheeses, toppings and a whole lot of passion.
Matt & Marie’s certainly delivers a craft delight, keeping up with the consumer trends as they shift towards a desire for the culinary experience. The sandwich, known to be one of the most satisfying foods, being that it is the perfect, all-in-one meal. “Especially when the bread is fresh baked that morning, when all the meats were just sliced…When anything on it was just pickled,” adds Capp.
