Delicious Raw: Making Plant-Based the Laid-Back, Natural Choice
In this episode of Fast Casual Nation, brought to you by Chepri, host Paul Barron chats with Flemming Madsen, the co-founder of South Beach-based kitchen and juice bar chain Delicious Raw. Born in Denmark, Madsen spent most of his career working in investment banking before moving to Florida and joining the restaurant industry in 2009.
True to its name, Delicious Raw specializes in healthy, plant-based dishes and juices that taste delicious. All ingredients are sustainably sourced using responsible farming practices. The chain currently maintains eight locations throughout south Florida.
“I’ve always been drawn to the healthier aspects of life,” says Madsen. “If you use something that is virtually pulled out of the ground and you treat it in the right way, you are able to create something that will appeal to a broad audience.”
Delicious Raw locations offer high ceilings, thoughtfully-placed greenery, and an overall spacious, laid-back feel. “The main element that we wanted to achieve with the interior design was to make it natural,” adds Madsen. “We always felt that when we looked at other types of healthy restaurants, they may have been a little too sterile in appearance. We wanted to go in the opposite direction.”
