Cava Mezze Grill: Chef Inspired Fast Casual

Based in Washington D.C., Cava Grill is a fast casual Mediterranean restaurant with a budget- and health-conscious clientele. Formerly a full-service restaurant, Cava transitioned to a fast casual business model when owners Ted Xenohristos, Chef Dimitri, and Ike Grigoropoulos recognized the market’s growing need for high quality, budget-friendly meals. The eco-friendly chain specializes in all-natural, hormone-free meats, and endeavors to keep its menu filled with local produce.
“We hit on every demographic,” says Chef Dimitri. “We like to partner up with local farmers and producers. And people can see that—it breaks that eight dollar barrier when you are part of the community, and you take the proper steps to put out the best quality product you can.”
As the chain expands, Cava remains committed to meeting the particular needs and interests of each location’s neighborhood. “We really like to highlight all the different partners that we work with,” adds Chef Dimitri. “It’s not just about us. It’s about everybody that we work with.”
